  1. Prepare all ingredients
  2. Fry chorizo with a little bit (1tsp) of cooking oil and leave it aside
  3. On a small saucepan, medium heat then add desiccated coconut stir until they turn golden brown then add garlic, sugar, salt and pepper. Mix them all well and put in a bowl.
  4. Making guacamole, mash avocado in a bowl the. Add garlic, shallots, chilli, coriander and lime juice. Mix well
  5. Making salsa, put tomatoes, shallots, coriander, salt and pepper and lime in a bowl and mix well
  6. Fry two eggs on a pan. Keep them on a plate
  7. Cut up tortilla by using the round cutter then fry them on the same pan as the eggs
  8. Time to resemble, put tortilla on, add guacamole, salsa, chorizo and repeat until you get to 3-4 layers.
